Thank you for the invitation to respond. I will just add that when I make bread with whole grains, or a rye flour (such a pumpernickel style), I usually add a small amount of gluten. It gives an extra ‘rise’ when the other flours are a little heavy. But this is only a convenience and improvement in texture.
