I have owned cats and fostered for years and not scuffed and or hissed at them. Kittens respond to distraction in the form of toys and time. The kitten is going to be obsessed with various things around the house, and after 2 or 3 days they will move to another target . The more you try to stop the behaviour instead of removing the danger the more interested they become. Yet kittens can not resist a toy rolling past them so instead of hissing or grabbing try rolling a toy and the wonderful wand toys.
